The AT-AT is relatively under-armed compared to all your other ground vehicles. If you were stuck with the same basic body form (i’m presuming there are in-universe reasons why the design would be retained), what would you change? I’m thinking:

1). Some sort of heavier defensive weapons turret on the tail end of the roof, perhaps something with a fast turning speed and a pair of TIE Laser Cannon for both air defense and light anti-vehicle work.

2). Two of the repeating blaster / grenade launcher turrets, mounted at the lower edge of the armor skirt between the legs on either side.

3). Two or more of the pop-up missile launchers from the AT-SE on the fore roof section to give it a bit more offensive punch in the forward arc.

Combined, 1 and 2 would make it more difficult for anti-air and sabotage attacks, and allow the head weaponry to concentrate more on attacking targets in the forward arc, augmented by missiles from 3. The result would still be primarily an APC, but would be more in-line with the weapons you’ve put on everything else.

It is called the AT-IC (All-Terrain Ion-Cannon) walker which as the name implied carry a Ion Cannon on it’s back.
